Hello Everyone!! Fall is rapidly approaching. Kids will be back in school if they aren't already in your area. Ours start on the 3rd of the month.. HORRRAYYYYYYYY!!! *eh hem.. *.. I digress. Pierre has finally got the Classified section added to the paper. It’s really neet. I hope you all have a look and find it useful. He’ll tell you a bit more of it down the page. We have had to change some forums to registered handles only. This is to thwart the spam attacks. We're sorry to have to do this but if we don't we'll get swamped with spam. If anyone has any trouble with spam in their forums or guest books there is a feature in your control panel to change to registered posters only. If you have any trouble contact my office and Grace will take care of it for you. It takes only minutes to register a handle and it's FREE! We’re gearing up for next month already. Everyone knows what happens in October! It’s Halloween month! I’m not quite sure what Joy has planned but since it is her favorite time of year I think … we should be afraid … be very afraid! She also asks if you have any favorite Halloween links, pictures, games what have you please send them on to her. We hope you're enjoying the features we've added to the site. Milk Thistle
Milk Thistle is a detoxifying herb for the liver and gall bladder containing high anti-oxidant properties to prevent free radical damage. It’s primarily used in cases of hepatitis and a blood balancing formula for circulation, however that’s not all. Ancient writings discovered recommend milk thistle to be used for liver and gall bladder disorders and as an antidote for the ingesting of poisonous mushrooms and even snake bite, and was used medicinally for over 2,000 years. But as pharmaceutical medicine took hold herbs fell out of favor. It wasn’t until 1949 while conducting science experiments on animals that they discovered milk thistle could protect the liver from the effects of carbon tetrachloride [ a manmade chemical used in fire extinguishers & refrigeration liquid]. Since then numerous clinical trials have shown favorable results via milk thistle---to such a degree many European hospitals use it medicinally to reverse the effects of acetaminophen poisoning, as well as poisonous mushrooms. The main active ingredient in Milk Thistle is silymarine---a strong antioxidant that squelches the free radicals resulting from the onslaught of chemicals used daily in our modern world. Even though Milk Thistle is used predominately to prevent or reverse liver diseases—it can also strengthens weak veins that result in varicose veins. It’s been known to reduce the bleeding in those who have thin gums and frequent nose bleeds, strengthening mucus membranes and nasal passages. Milk Thistle promotes better circulation throughout the body, but particularly in the pelvic area and fibrous tissues—reducing fibrocystic breast symptoms. Since the liver is responsible for processing estrogen, progesterone plus other beneficial hormones improving the liver creates a more favorable hormonal balance throughout the body. Therefore Milk Thistle by way of improving the condition of the liver is able to reduce food cravings, irritableness and bloating during PMS and menopause, and it can also reduce or prevent prolapsed organs after childbirth and stimulate milk production during breast feeding especially in combination with other herbs such as fennel and hops. And while chemotherapy can save lives, it can also play havoc on the heart, brain, kidney, and bone marrow often resulting in permanent organ damage. Can’t you just feel it in the air? All those sighs from mothers who can just hardly wait for that one last sleep to get over with. Kids walking to school or waiting for school buses in new clothes that were bought at places like Blue Navy or the Gap. I also remember this time of year and that first day of school and the smell of autumn in the air. Do you remember our new clothes on that first day that were bought in places like Woolworth’s or Woolco? Instead of going back to school costing as much as Christmas, my parents seemed to be able to dress us well on cash alone. I was especially fond of my new shoes. Except for when I went into grade six and was told my feet were still "growing" and I had to put something in the toe of them all year so they would fit. Later on I went to schools where uniforms were worn. These were public schools and now I suppose this would be considered interfering with a child’s individuality but there has to be something said for not having to care what everyone else is wearing. I have to admit there were also some negative things about uniforms. Like I don’t think I will ever get over my one piece gym outfit that had puffy legs down to the knees. Note to self, tell shrink about this! For me the best part of the school year was when you could get your new school supplies especially my new scribblers (that’s what we called them!). And of course there were different ones for each subject and I would keep them so neat for at least the first week. Today school supplies are not only supposed to be functional but they also have to be fashion accessories. Oh, how things have changed. I can now hear the sighs from mothers getting stronger everywhere. So get those kids off to school, put your feet up and take in that autumn air. HANNAH
Now we reach the final installment of our three part essay on home brewing beer. Today we will talk about brewing beer from whole malted grains, a process known as all grain (AG) brewing. Since AG brewing has many different techniques and processes, in the interest of brevity we will deal only with a very basic process in this article.
Once the grains have been crushed they need to be mashed. Mashing is simply a term used for adding a specified amount of hot water. Usually that amount is about 2.75 to 3.3 litres to a kilogram of grain. As you might have guessed, the temperature of the hot water is fairly critical too. A lower temperature at about 67 degrees Celsius (152º Fahrenheit) will lead to a dryer and thinner beer and a higher mash temperature of about 70 degrees Celsius (158º Fahrenheit) will yield a sweeter beer with more body. Once the grains have mashed for an hour, most of the starches in the grain should be fully converted to fermentable sugars and now it’s time to remove those sugars from the spent grain husks. This is a process known as ‘sparging’. Sparging is simply no more than rinsing the grains with still hotter water. There are two types of sparging techniques: fly sparging and batch sparging. With fly sparging, the water is sprinkled gently over top of the grain bed such that the water added is equal to the water being taken away. This needs to be a fairly slow process so that the water doesn’t form channels through the grain bed. With batch sparging, the entire amount of sparge water is added to the grains, stirred to encourage the sugars to dissolve into solution, then rapidly drained. Prior to draining the wort, as the grain-sugar solution is known, a technique known as vorlaufing is used. Again, this is another fancy name for a simple process. Vorlaufing is nothing more than draining a litre or two of wort into a container and the adding it back to the rest of the mashed grains. This keeps the small particles and grain husks that initially come out of the mash from getting into the brew kettle and allows the grain bed to compress into a filter. Now that there is a boil kettle full of wort, you can take a gravity reading if you choose. Keep in mind that your reading will be a little on the low side because a brewer will normally collect more wort than will go into a fermenter. This is to allow for some evaporation in the boil. In fact, many brewers don’t even bother with this gravity reading because of this and because it required you take a reading when the wort is still somewhat hot. Most hydrometers are accurate only at their calibrated temperatures. The really important reading is done after the wort is boiled and cooled. During the boil, some proteins will coagulate and come out of solution. They will look like little strands floating in the beer. The more vigorous the boil, the better these proteins will coagulate. Additionally, when the wort is rapidly cooled still more proteins will coagulate. Always boil your wort with the lid off. When wort is heated, compounds called dimethyl sulphates (DMS) will form and if the lid is off, they will be carried away out of the wort. If a lid is on, the DMS will condense on the lid and fall back into the brew. This will give the wort a ‘cooked corn’ taste. This is considered a flaw is most styles. The final step in getting the wort into the fermenters is to cool the it as rapidly as possible. There are many different kinds of chillers but the two most popular styles are immersion and counter flow. An immersion chiller is simply a ring of copper tubing that sits in the wort. Cold water is pumped through the tubing and extracts heat directly from the pool of hot wort. A counter flow chiller pumps both the wort and water through tubes in proximity to each other, usually one inside the other. Counter flow chillers are more efficient but harder to clean than immersion chillers. This is an extremely basic overview of the brewing process but will give the novice a general idea. There are a great many resources available at your local bookstore or online if you want to pursue the hobby any further. The more you eat the more you toot. The more you toot the better you feel, So beans, beans for every meal! They really are wonderful little things.
5 cups of grated cheese mixture of Cheddar and Mozzarella
Now this dish is a bit high in sodium. The juice in the bean cans contain quite a bit so if you are trying to watch your sodium intake drain and rinse the beans. You may need a bit more moisture in the concoction if you do not use the juices so you can either add a ½ can or so of water or a bit more tomato sauce OR one can of tomato sauce and one can of large crushed tomatoes. You don’t want the mixture runny though.
Mix all ingredients together. Once you have it all mixed it’s time to fill your tortilla shells. Place 2 heaping tablespoons or bean mix per shell and start to wrap, folding in the edges as you go. Once you’ve wrapped the bean mixture into you tortilla shells place them flap side down on a baking sheet. Bake at 350 degrees for 40 minutes or till shell is slighty crusty. CAUTION. The contents are now molten lava so even though you are anxious to bite into it let it cool just a bit.. (We will not be held responsible for loss of tongue or lower lip. Teeth eyeballs or chin hairs you were warned!) These freeze really well and can be heated up in the microwave for quick meals. EnJoy!
Beans provide a major source of soluble fiber, which, when passing through the digestive tract grabs and traps bile that contains cholesterol, removing it from the body before it's absorbed. According to Patti Bazel Weil R.D.,diabetes nutrition educator at the University of Kentucky in Lexington and author of "Magic Beans", eating a cup of cooked beans a day can lower your total cholesterol by up to 10% in 6 weeks. Though that may not seem like much, it actually decreases your risk of heart disease by 20%. A study conducted at the University of Kentucky has shown that only three weeks of increased bean intake (3/4 cup of navy and pinto beans) lowered the men's cholesterol by an average of 19%. This reduces the risk of heart attack by almost 40%. Also because of the high fiber in beans, they can curb your appetite for fattier more dangerous foods. > In addition to these benefits, the compound found in beans-isoflavins lagnins phytic acid sapopin and protease inhibitors- have been shown to keep normal cells from turning cancerous and inhibit their growth. The soybean contains phytoestrogens, a weaker version of the estrogen produced in our bodies naturally. Phytoestrogens are believed to reduce the risk of breast and prostate cancer, by blocking over activity of estrogen and testosterone which can spur cancerous tumor growth. Overall studies have shown Hispanic women have half the risk of breast cancer as white women. This disparity is believed to be due to the high content of beans in their diet. So eat your beans everyone.. just… don’t bend over near open flames. EnJOY!
HELPFUL HINTS
Peel a banana from the bottom and you won’t have to pick the little "stringy things" off of it. That’s how the primates do it!
Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster.
Store your opened chunks of cheese in aluminum foil. It will stay fresh much longer and not mold!
Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking.
Add a teaspoon of water when frying ground beef. It will pull the grease away from the meat while cooking.
To really make scrambled eggs or omelets rich add a couple of spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them up.
Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza.
Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if you want a stronger taste of garlic.
When you buy a container of cake frosting from the store, whip it with a mixer for a few minutes. You can double the size. You get to frost more cake or cupcakes with the same amount. You also eat less sugar and calories per serving.
Before you pour sticky substances into measuring cup, fill with hot water. Dump out the hot water,but don’t dry cup. Next, add your ingredient, such as peanut butter, and watch how easily it comes right out.

The NFL hits THE SPORTS CENTER! (by Ed) THREE games are about to launch at The Sports Center - all of them easy, and all guess-based. EVERYONE is welcome - and don't be shy just because you don't know the game, or even if your idea of "football" doesn't allow hands - its been said the best NFL guessers have used mascots or zoos or orchestras or colors in years gone by - or just home-teams - to pick the winners. That's one game, just picking winners. Rose Willow has let me bring Pick-3 and Lucky Loser here, which are fun and easy sort of guessing games too. If anyone thought the baseball game was tricky, these make that look like cake - and why not have a go? DON'T be shy, and everyone trying baseball SHOULD - you're just guessing with everyone else... except you have to guess weekly, instead of monthly. It's fun - it's easy - and nobody marks you out or cares if you get one wrong - it's *guessing*! Come take a flyer - details aplenty on The Sports Center - the most you'd ever have to do is peek in and guess, Thursday mornings, maybe - it's a piece of cake - you may guess wrong, but you'll be a legend in the standings, no matter what!
